Savory Bacon-Wrapped Smokies Recipe with Easy Brown Sugar Glaze

Delicious little smokies wrapped in crispy bacon and coated with a sticky-sweet brown sugar glaze, perfect for potlucks, game days, or any gathering.

  • 1 pound (450 g) Little Smokies Sausages
  • 12 slices thin-cut bacon
  • ⅓ cup (65 g) packed brown sugar
  • 1 tablespoon (15 ml) Dijon mustard (optional)
  • ½ teaspoon (2.5 g) garlic powder
  • ¼ teaspoon (1.25 g) freshly ground black pepper
  • Toothpicks for securing bacon

Instructions

  1. Preheat your oven to 400°F (200°C). Line a baking sheet with parchment paper or foil for easy cleanup.
  2. In a mixing bowl, combine ⅓ cup brown sugar, 1 tablespoon Dijon mustard, ½ teaspoon garlic powder, and ¼ teaspoon black pepper. Stir until smooth and well blended.
  3. Wrap each little smokie tightly with one slice of bacon and secure with a toothpick through both ends.
  4. Coat each bacon-wrapped smokie generously with the brown sugar glaze using a spoon or pastry brush.
  5. Place the glazed smokies seam side down on the baking sheet, leaving space between each for even cooking.
  6. Bake for 20-25 minutes, turning once halfway through (around 12 minutes), until bacon is crisp and glaze is caramelized.
  7. Let cool for 5 minutes on the baking tray before serving.

Notes

Use thin-cut bacon for best crispiness. Watch glaze closely after 20 minutes to prevent burning. Broil 1-2 minutes at the end if bacon isn’t crisp enough. Can prepare in advance and refrigerate up to 24 hours before baking. Freeze on baking sheet then transfer to freezer bag for longer storage.
