  • About 24 mini plastic or silicone cups (1-ounce or 30 ml size)

Instructions

  1. Bloom the gelatin: Sprinkle 2 tablespoons (14 grams) of unflavored gelatin over 1 cup (240 ml) of cold water or fruit juice in a medium bowl. Let it sit for 5 minutes until it absorbs the liquid and becomes spongy.
  2. Dissolve the gelatin: Boil 1 cup (240 ml) of water and pour it over the bloomed gelatin. Whisk vigorously for 1-2 minutes until completely dissolved and smooth.
  3. Add sugar and juice: Stir in 1/2 cup (100 grams) sugar until fully dissolved. Then mix in 2 tablespoons (30 ml) fresh lemon or lime juice. If using fruit juice, add 1/2 cup (120 ml) now.
  4. Incorporate sparkling liquid: Allow the gelatin mixture to cool slightly (about 10 minutes), then gently fold in 1 cup (240 ml) of cold sparkling water or champagne, being careful not to stir too hard to preserve bubbles.
  5. Add food coloring (optional): Add a few drops of food coloring and stir gently to combine.
  6. Pour into cups: Using a small funnel or steady hand, carefully fill mini cups about 3/4 full (makes roughly 24 shots).
  7. Chill and set: Place the cups in the refrigerator for at least 4 hours or until firm. Check by gently touching the surface; it should spring back without sticking.
  8. Serve and enjoy: Pop the shots out with fingers or serve in their cups. Garnish with a tiny slice of fruit or a sprig of mint if desired.

Notes

Bloom gelatin properly to avoid grainy texture. Cool gelatin mixture before adding sparkling water or champagne to preserve fizz. Use fresh citrus juice for best flavor.
