5-Minute Sunbutter Apple Roll-Ups: Easy Nut-Free Snack

  • 2 large apples (Honeycrisp, Fuji, or Gala)
  • 1/4 cup sunflower seed butter (no-stir or creamy)
  • 1/2 teaspoon cinnamon (optional)
  • 1 teaspoon honey or maple syrup (optional)

Instructions

  1. Wash and core your apples. If using an apple corer, remove the core in one clean push. Alternatively, cut the apple into quarters and slice out the core from each piece.
  2. Slice the apples into 1/4-inch thick rounds. Each apple should yield about 6-8 good slices.
  3. Lay one apple slice flat on a cutting board. Spread a thin, even layer (about 1/8 inch) of sunflower seed butter across the entire surface.
  4. If desired, sprinkle a tiny pinch of cinnamon over the sunbutter, or drizzle a drop or two of honey or maple syrup.
  5. Starting at one edge, gently roll the apple slice into a tight cylinder. Use your fingers to guide the roll, keeping it snug but not tight enough to squeeze out the sunbutter.
  6. Repeat with remaining apple slices. Serve immediately or store in the refrigerator.

Notes

Choose firm, crisp apples like Honeycrisp or Fuji for best results. Keep sunbutter at room temperature for easier spreading. Don’t overstuff with sunbutter; a thin layer is sufficient. If apple slices crack, press them back together—the sunbutter will seal them. Store leftovers in an airtight container in the refrigerator for up to 3 days.
