Ingredients

Scale
  • 3 cups cooked chicken, shredded (rotisserie chicken recommended)
  • ½ cup buffalo wing sauce (e.g., Frank’s RedHot)
  • ¼ cup ranch dressing, plus more for drizzling
  • 2 tablespoons butter, melted
  • 1 tablespoon ranch seasoning mix
  • 1 cup celery sticks (3-inch pieces)
  • 1 cup carrot sticks (or baby carrots, halved lengthwise)
  • 1 cup cucumber slices (English cucumber recommended)
  • 1 cup cherry tomatoes, halved
  • ½ cup blue cheese dressing (optional)
  • ½ cup extra ranch dressing (for dipping)
  • 2 cups wonton chips
  • 2 cups crackers (butter crackers, wheat thins, or mini pretzels)
  • 2 cups tortilla chips (sturdy for scooping)
  • 1 cup cubed cheddar or pepper jack cheese
  • ¼ cup fresh chives or parsley, chopped

Instructions

  1. Make the Buffalo Ranch Chicken: In a medium mixing bowl, combine shredded chicken, buffalo wing sauce, ranch dressing, melted butter, and ranch seasoning mix. Stir until fully coated. Taste and add more hot sauce if desired.
  2. Prep the Veggies: Wash and cut celery, carrots, and cucumber into sticks. Halve cherry tomatoes.
  3. Choose Your Board: Select a large platter or board (16×20 inches recommended). Ensure it is clean and dry.
  4. Place the Dips First: Set small bowls of ranch dressing and blue cheese dressing on opposite sides of the board.
  5. Add the Buffalo Chicken: Spoon the buffalo ranch chicken into a large pile in the center or slightly off to one side.
  6. Build the Crunchy Layers: Fill gaps around the chicken with wonton chips, crackers, and tortilla chips, fanning them out in small clusters.
  7. Add the Veggies and Cheese: Tuck celery, carrot, and cucumber sticks into spaces between chips. Scatter cherry tomatoes and cheese cubes around the board.
  8. Garnish and Serve: Sprinkle fresh chives or parsley over the entire board. Drizzle extra ranch dressing over the chicken if desired. Serve immediately at room temperature.

Notes

Let the chicken cool for 10-15 minutes after mixing before assembling to prevent chips from getting soggy. Prep all components a day in advance for easy assembly. The buffalo ranch chicken tastes even better the next day.
