This confetti birthday sheet cake is tender, moist, and topped with a silky vanilla buttercream. It’s a simple, one-bowl recipe that feeds a crowd and is perfect for last-minute celebrations.

  • 2 cups granulated sugar
  • 4 large eggs, room temperature
  • 2 teaspoons vanilla extract
  • 3 cups all-purpose flour
  • 2 teaspoons baking powder
  • 1/2 teaspoon salt
  • 1 cup whole milk, room temperature
  • 1/2 cup rainbow sprinkles (jimmies)
  • 1 1/2 cups (3 sticks) unsalted butter, softened (for buttercream)
  • 4 cups powdered sugar, sifted (for buttercream)
  • 1 tablespoon vanilla extract (for buttercream)
  • 34 tablespoons heavy cream (for buttercream)
  • 1/4 teaspoon salt (for buttercream)

Instructions

  1. Preheat oven to 350°F (175°C). Line a 13×9-inch pan with parchment paper, leaving overhang on long sides. Grease parchment and exposed pan sides.
  2. In a large bowl, beat softened butter and granulated sugar until light and fluffy, about 3-4 minutes.
  3. Add eggs one at a time, beating well after each. Stir in vanilla extract.
  4. In a separate bowl, whisk together flour, baking powder, and salt.
  5. Alternate adding flour mixture and milk to butter mixture, starting and ending with flour. Mix until just combined.
  6. Gently fold in rainbow sprinkles with a rubber spatula.
  7. Pour batter into prepared pan and spread evenly. Bake 28-32 minutes until a toothpick inserted in center comes out clean or with moist crumbs.
  8. Cool in pan on wire rack for 15 minutes, then lift out using parchment and cool completely.
  9. For buttercream: In a stand mixer with paddle attachment, beat softened butter on medium speed until smooth, about 2 minutes.
  10. Reduce speed to low and gradually add sifted powdered sugar, 1 cup at a time.
  11. Add vanilla extract and salt. With mixer running, add heavy cream 1 tablespoon at a time until spreadable consistency.
  12. Increase speed to medium-high and beat 2-3 minutes until light and fluffy.
  13. Spread buttercream over cooled cake using an offset spatula. Top with extra sprinkles if desired.

Notes

Use jimmies (rod-shaped sprinkles) to prevent color bleeding. Ensure all ingredients are at room temperature for best results. Do not overmix batter. Cool cake completely before frosting.
