  • 1 large egg
  • ¼ cup maple syrup (real maple syrup)

  • 1 teaspoon vanilla extract
  • 1 large apple, peeled and diced into small cubes (Honeycrisp, Fuji, or Granny Smith)
  • 1 tablespoon maple syrup (for apple layer)
  • ½ teaspoon cinnamon (for apple layer)
  • Pinch of salt (for apple layer)
  • ¼ cup chopped pecans or walnuts (optional topping)
  • 2 tablespoons brown sugar (optional topping)
  • Drizzle of almond butter or peanut butter (optional topping)

Instructions

  1. Preheat oven to 375°F (190°C). Line a 12-cup muffin tin with liners or grease well.
  2. In a small bowl, toss diced apple with 1 tablespoon maple syrup, ½ teaspoon cinnamon, and a pinch of salt. Set aside.
  3. In a medium bowl, whisk together rolled oats, baking powder, cinnamon, nutmeg, and salt.
  4. In a separate bowl or measuring cup, whisk together milk, egg, maple syrup, melted coconut oil (or butter), and vanilla extract.
  5. Pour wet ingredients into dry ingredients and stir until just combined. Do not overmix.
  6. Divide oatmeal mixture evenly among 12 muffin cups (about ¾ full each).
  7. Spoon maple-cinnamon apples on top of each cup, pressing in slightly. Reserve a few apple pieces for the top.
  8. If using, sprinkle chopped nuts or brown sugar on top.
  9. Bake for 18-22 minutes, until edges are golden brown and tops are set. A toothpick inserted in the center should come out clean or with a few moist crumbs.
  10. Let cool in the pan for 5 minutes, then transfer to a wire rack to cool completely.
