This spicy chipotle turkey chili is the perfect game day comfort food—smoky, hearty, and ready in under an hour. Made with lean ground turkey, fire-roasted tomatoes, and chipotle peppers, it’s a crowd-pleaser that’s actually good for you.

  • 1 large yellow onion, diced (about 1 ½ cups)
  • 1 red bell pepper, diced
  • 4 cloves garlic, minced
  • 2 pounds ground turkey (93% lean)
  • 3 tablespoons tomato paste
  • 1 to 2 chipotle peppers in adobo sauce, minced
  • 1 tablespoon adobo sauce
  • 2 tablespoons chili powder
  • 1 tablespoon ground cumin
  • 1 teaspoon smoked paprika
  • 1 teaspoon dried oregano
  • ½ teaspoon cayenne pepper (optional)
  • 1 teaspoon salt
  • ½ teaspoon black pepper
  • 1 can (14.5 ounces) fire-roasted diced tomatoes (undrained)
  • 1 can (15 ounces) black beans, drained and rinsed
  • 1 can (15 ounces) kidney beans, drained and rinsed
  • 2 cups low-sodium chicken broth
  • 1 tablespoon brown sugar
  • Shredded sharp cheddar cheese (for serving)
  • Sour cream or Greek yogurt (for serving)
  • Fresh cilantro, chopped (for serving)
  • Diced avocado (for serving)
  • Lime wedges (for serving)
  • Crushed tortilla chips or Fritos (for serving)

Instructions

  1. Heat the oil in a Dutch oven over medium-high heat. Once it shimmers, add the diced onion and bell pepper. Cook for 5 to 6 minutes, stirring occasionally, until the onion is translucent and the pepper softens.
  2. Add the garlic and cook for 30 seconds until fragrant.
  3. Add the ground turkey. Break it up with a wooden spoon and cook for 6 to 8 minutes, until no pink remains.
  4. Push the meat to the sides of the pot and add the tomato paste to the center. Let it cook for 2 minutes, stirring constantly, until it darkens to a brick color.
  5. Stir in the minced chipotle peppers and adobo sauce. Cook for 1 minute.
  6. Sprinkle in the chili powder, cumin, smoked paprika, oregano, cayenne (if using), salt, and pepper. Stir and cook for 1 minute.
  7. Pour in the fire-roasted tomatoes (with juices), chicken broth, and brown sugar. Stir well, scraping the bottom of the pot to release any browned bits.
  8. Bring the chili to a boil, then reduce heat to low. Cover and simmer for 25 minutes, stirring occasionally.
  9. After 25 minutes, stir in the drained black beans and kidney beans. Simmer uncovered for another 10 minutes.
  10. Taste and adjust seasoning as needed. Remove from heat and let rest for 5 minutes before serving.

Notes

For best flavor, char the tomato paste before adding liquid. Start with one chipotle pepper and adjust heat to taste. Chili improves overnight—make it a day ahead for deeper flavor. To thicken, simmer uncovered longer or mash some beans against the pot.
