  • 1 cup milk (whole milk preferred, or 2% or oat milk)
  • ½ cup strong brewed coffee or espresso (about 2 shots)
  • 1 to 2 tablespoons granulated sugar (adjust to taste)
  • ½ teaspoon pumpkin pie spice
  • ½ teaspoon vanilla extract
  • 1 cinnamon stick (optional, for simmering)
  • Whipped cream (for topping)
  • Cinnamon and nutmeg (for garnish)

Instructions

  1. Brew ½ cup of strong coffee or pull 2 shots of espresso. Set aside.
  2. In a small saucepan over medium heat, combine 1 cup milk and 2 tablespoons pumpkin purée. Whisk until smooth and no lumps remain.
  3. Stir in ½ teaspoon pumpkin pie spice, 1-2 tablespoons sugar, and ½ teaspoon vanilla extract. Add a cinnamon stick if using. Whisk until sugar dissolves and mixture is steaming (about 2-3 minutes). Do not boil.
  4. Heat until small bubbles form around the edges. Remove from heat immediately.
  5. Pour the brewed coffee into a mug. Slowly pour the hot pumpkin milk mixture over the coffee. Stir gently.
  6. Optional: Froth the milk mixture before pouring, using a frother, whisk, or shaking in a jar.
  7. Top with whipped cream and dust with cinnamon and nutmeg.
  8. Serve immediately.

Notes

For a stronger pumpkin flavor, add an extra tablespoon of pumpkin purée and reduce milk by 2 tablespoons. If the latte tastes grainy, whisk the pumpkin purée more thoroughly. Adjust sweetness to taste. For dairy-free, use oat milk. The pumpkin milk mixture can be stored in the refrigerator for up to 3 days.
