A comforting slow cooker soup that captures the rich flavors of lasagna without the labor. Ground beef, no-boil noodles, and creamy ricotta create a hearty, easy-to-make meal perfect for busy weeknights.

  • 1 lb ground beef (80/20)
  • 1 medium onion, diced
  • 3 cloves garlic, minced
  • 2 tablespoons olive oil
  • 2 cans (28 oz each) crushed tomatoes
  • 1 can (15 oz) tomato paste
  • 4 cups beef broth (low sodium)
  • 1 teaspoon dried basil
  • 1 teaspoon dried oregano
  • 1/2 teaspoon red pepper flakes (optional)
  • 12 no-boil lasagna noodles, broken in half
  • 1 cup ricotta cheese
  • 1 cup shredded low-moisture mozzarella cheese
  • Fresh basil, chopped (for garnish)
  • Parmesan cheese, grated (for serving)

Instructions

  1. Heat olive oil in a large skillet over medium-high heat. Add ground beef and cook until browned, breaking it up with a wooden spoon. Drain excess fat.
  2. Add diced onion and minced garlic to the skillet. Cook for 2 minutes until fragrant.
  3. Transfer the meat mixture to a 6-quart slow cooker.
  4. Add crushed tomatoes, tomato paste, beef broth, dried basil, dried oregano, and red pepper flakes. Stir well to incorporate the tomato paste.
  5. Break lasagna noodles in half or thirds and lay them on top of the sauce. Pour in enough water to cover the noodles slightly.
  6. Cover and cook on low for 6 hours or high for 3-4 hours, until noodles are tender.
  7. In a small bowl, mix ricotta cheese with a splash of milk or broth to loosen. Dollop spoonfuls into the hot soup.
  8. Sprinkle mozzarella cheese on top. Cover and let sit for 5 minutes to allow residual heat to melt the cheese.
  9. Ladle into bowls and garnish with fresh basil and parmesan cheese. Serve with crusty bread.

Notes

Do not use fresh mozzarella balls as they release too much water. Taste the sauce before adding extra salt as tomatoes and broth vary in sodium. For a lighter option, use ground turkey or chicken. For a vegetarian version, swap beef for lentils or mushrooms.
