  • 1/4 cup packed (50g) brown sugar

  • 1 1/2 cups (190g) all-purpose flour
  • 1 teaspoon baking soda
  • 1/2 teaspoon salt
  • 3/4 cup (130g) semi-sweet or dark chocolate chips
  • Optional: 1/2 cup chopped walnuts or pecans

Instructions

  1. Brown the butter: In a small saucepan over medium heat, melt the unsalted butter. Stir occasionally until it foams, turns golden with brown flecks, and smells nutty. Remove from heat immediately and transfer to a mixing bowl to cool for a few minutes.
  2. Mix wet ingredients: Add granulated sugar and brown sugar to the browned butter and stir until combined. Add mashed bananas, egg, and vanilla extract. Stir gently until smooth, allowing some lumps from bananas.
  3. Combine dry ingredients: In a separate bowl or sieve, whisk together all-purpose flour, baking soda, and salt.
  4. Add dry to wet: Gradually fold the dry ingredients into the wet mixture using a spatula. Mix just until combined to avoid toughness.
  5. Fold in chocolate chips and nuts (if using): Toss chocolate chips in a tablespoon of flour before folding in to prevent sinking. Gently stir in chocolate chips and nuts.
  6. Prepare pan and bake: Lightly grease a 9×5-inch loaf pan or line with parchment paper. Pour batter evenly and smooth the top. Bake at 350°F (175°C) for 60-65 minutes, or until a toothpick inserted in the center comes out with a few moist crumbs. Tent with foil halfway through if top browns too fast.
  7. Cool and enjoy: Let bread cool in the pan for 10 minutes, then transfer to a wire rack to cool completely before slicing.
