  • 1 pound spicy or mild Italian sausage, casings removed
  • 1 medium yellow onion, diced
  • 3 cloves garlic, minced
  • 4 cups low-sodium chicken broth
  • 1.5 pounds Yukon Gold potatoes, diced
  • 1 teaspoon dried thyme
  • 1/2 teaspoon smoked paprika (optional)
  • 1/2 cup heavy cream
  • 3 cups chopped kale, stems removed
  • Salt and black pepper to taste
  • Red pepper flakes for garnish (optional)
  • Fresh parsley, chopped

Instructions

  1. Brown the sausage: Heat olive oil in a Dutch oven over medium-high heat. Add sausage, breaking it up, and cook until browned (5-7 minutes). Transfer to a plate with a slotted spoon, leaving drippings.
  2. Sauté aromatics: Reduce heat to medium. Add diced onion to the pot and cook until soft (3-4 minutes). Add minced garlic and cook 30 seconds until fragrant.
  3. Add broth and potatoes: Pour in chicken broth, scraping up browned bits. Add diced potatoes, dried thyme, and smoked paprika. Bring to a boil, then reduce to a simmer. Cover and cook until potatoes are tender (12-15 minutes).
  4. Add cream and kale: Stir in heavy cream and chopped kale. Cook until kale wilts (2-3 minutes).
  5. Return sausage: Add cooked sausage back to the pot. Stir and heat through (1-2 minutes). Season with salt and pepper to taste.
  6. Serve: Ladle into bowls and garnish with red pepper flakes and fresh parsley. Serve hot.

Notes

Don’t skip browning the sausage for maximum flavor. Cut potatoes into even 1/2- to 3/4-inch cubes. Remove kale stems before chopping. Taste and adjust seasoning as you go. Let soup rest 5 minutes before serving for flavors to meld.
