  • 4 medium apples (mixed tart and sweet, such as Granny Smith and Honeycrisp), cored and chopped
  • 32 oz (950 ml) fresh-pressed apple cider
  • 2 large cinnamon sticks
  • 45 whole cloves
  • 1 star anise pod (optional)
  • 1/4 teaspoon freshly grated nutmeg
  • 1 teaspoon pure vanilla extract
  • Honey or maple syrup (optional, to taste)

Instructions

  1. Wash apples and chop into rough, bite-sized chunks, leaving skins on. Place in the slow cooker insert.
  2. Add cinnamon sticks, cloves, star anise (if using), and nutmeg to the slow cooker.
  3. Pour the apple cider over the apples and spices, ensuring apples are mostly submerged.
  4. Cover and set the slow cooker to LOW for 3 to 4 hours. Do not use HIGH heat.
  5. After cooking, switch the slow cooker to WARM and let steep for 15-20 minutes to allow flavors to meld.
  6. Ladle into mugs, straining out apples and spices if desired.
  7. Stir in vanilla extract and add honey or maple syrup only if needed.
  8. Serve immediately while hot.

Notes

Use fresh-pressed cider rather than filtered apple juice for better flavor. Do not rush the steeping phase on the ‘warm’ setting. If using a large slow cooker, the flavor may be less intense. Leftovers can be stored in the refrigerator for up to 5 days.
