  • 8 mini brioche buns
  • 4 slices sharp cheddar cheese
  • Salt and freshly ground black pepper, to taste
  • 2 tbsp (28 g) butter, softened
  • Dill pickles, sliced
  • Ketchup, to taste
  • Mustard, to taste
  • Onion, thinly sliced (optional)

Instructions

  1. Preheat your cast iron skillet or griddle over medium-high heat until smoking hot, about 5 minutes.
  2. In a mixing bowl, gently mix the ground beef with salt and freshly ground black pepper, being careful not to overwork the meat.
  3. Divide the beef into 8 equal balls, about 2 ounces (57 g) each. Do not flatten yet.
  4. Spread softened butter on the cut sides of each mini brioche bun and set aside.
  5. Place 2-3 meatballs on the hot skillet without overcrowding, then immediately press down firmly with a spatula to smash them into thin patties. Hold pressure for 10-15 seconds.
  6. Cook patties undisturbed for 2-3 minutes until edges are deeply browned and crispy.
  7. Flip each patty carefully, place a slice of cheddar cheese on top, and cook for another 1-2 minutes until cheese melts and patties are cooked through.
  8. While patties finish cooking, toast the buttered buns cut side down on a separate pan or the same skillet for about 1 minute until golden and slightly crispy.
  9. Assemble sliders by placing each patty on a toasted bun bottom, adding pickles, optional onion slices, and drizzling ketchup and mustard.
  10. Top with the bun’s top half and serve immediately.

Notes

Do not press patties too thin or too hard to retain juiciness. Let patties cook undisturbed to form a crispy crust. Toast buns with butter to prevent sogginess. Patties can be shaped ahead and refrigerated up to 24 hours before cooking. For gluten-free options, use gluten-free buns or lettuce wraps.
