  • 1 teaspoon ground cinnamon
  • ½ teaspoon ground nutmeg
  • ¼ teaspoon ground ginger
  • ¼ teaspoon salt
  • 6 tablespoons unsalted butter, cold and cut into small cubes

Instructions

  1. Preheat your oven to 375°F (190°C). Position a rack in the center of the oven.
  2. Prepare the fruit filling: In a large mixing bowl, combine the sliced pears, cranberries, granulated sugar, cornstarch, lemon juice, and vanilla extract. Toss gently with a rubber spatula until the fruit is evenly coated. Set aside.
  3. Make the spiced oat topping: In a medium mixing bowl, whisk together the rolled oats, all-purpose flour, almond flour, brown sugar, cinnamon, nutmeg, ginger, and salt. Add the cold, cubed butter. Using a pastry cutter or two forks, cut the butter into the dry mixture until it resembles coarse crumbs with some pea-sized butter pieces remaining.
  4. Assemble the crisp: Pour the fruit mixture into an 8×8-inch baking dish and spread into an even layer. Sprinkle the topping evenly over the fruit. Do not press it down.
  5. Bake: Place the dish on a baking sheet and bake for 40-45 minutes, or until the fruit is bubbling around the edges and the topping is deep golden brown. If the topping browns too quickly, tent loosely with foil for the last 10 minutes.
  6. Cool and serve: Let the crisp cool on a wire rack for at least 15-20 minutes before serving. Serve warm, preferably with vanilla ice cream or whipped cream.

Notes

For extra crispy topping, use cold butter and do not over-mix. Let the crisp rest after baking to allow the filling to set. If using frozen cranberries, add 5-10 minutes to baking time. To make gluten-free, swap all-purpose flour with a 1:1 gluten-free blend. For a vegan version, use dairy-free butter. Toasting the oats first adds extra nutty flavor.
