Creamy Crockpot Chicken Thighs Recipe Easy Homemade Mushroom Sauce

A comforting and easy slow cooker recipe featuring bone-in, skin-on chicken thighs cooked in a rich, creamy mushroom sauce. Perfect for busy weeknights and cozy dinners.

  • 6 bone-in, skin-on chicken thighs (about 2 pounds / 900 grams)
  • 8 ounces (225 grams) sliced cremini or white button mushrooms
  • 3 cloves garlic, minced
  • 1 medium onion, finely chopped
  • 1 cup (240 ml) low sodium chicken broth
  • 1/2 cup (120 ml) heavy cream (can substitute half-and-half or coconut cream for dairy-free)
  • 2 tablespoons unsalted butter, softened
  • 2 teaspoons fresh thyme, chopped (or 1 teaspoon dried)
  • Salt and pepper to taste
  • 2 tablespoons all-purpose flour (can substitute cornstarch or arrowroot powder for gluten-free)

Instructions

  1. Pat 6 bone-in, skin-on chicken thighs dry with paper towels. Season generously with salt and pepper on both sides.
  2. Heat 1 tablespoon of butter in a skillet over medium-high heat. Add chicken thighs skin-side down, and cook for about 4-5 minutes until the skin is golden and crispy. Flip and cook for 3 more minutes. This step is optional but enhances flavor.
  3. Remove chicken and set aside. In the same skillet, add chopped onion and cook for 2 minutes until softened. Add minced garlic and sliced mushrooms and sauté until mushrooms release moisture and start to brown, about 5-7 minutes.
  4. Transfer mushroom, onion, and garlic mixture into the slow cooker. Nestle the browned chicken thighs on top.
  5. Pour in 1 cup (240 ml) low-sodium chicken broth and sprinkle 2 teaspoons chopped fresh thyme over the chicken.
  6. Cover and cook on low for 5-6 hours, or on high for about 3 hours, until chicken is tender and cooked through (internal temperature 165°F / 74°C).
  7. About 30 minutes before serving, mix 2 tablespoons all-purpose flour with 1/2 cup (120 ml) heavy cream until smooth. Stir this mixture into the crockpot. Add remaining 1 tablespoon butter and gently stir to combine. Recover and cook for final 30 minutes to thicken sauce.
  8. Taste the sauce and season with additional salt and pepper if needed. Serve hot.

Browning the chicken and sautéing the mushrooms before slow cooking enhances flavor and texture. Use bone-in, skin-on thighs for juiciness.
