  • 1 pound (450g) peeled and deveined medium shrimp (fresh or thawed frozen shrimp)
  • 8 ounces (225g) fettuccine or linguine pasta
  • 4 tablespoons unsalted butter, divided
  • 4 cloves garlic, minced
  • ½ cup chopped sun-dried tomatoes (oil-packed, drained)
  • 2 cups fresh baby spinach (or kale)
  • 1 cup (240ml) heavy cream
  • ½ cup grated Parmesan cheese
  • ½ cup (120ml) white wine or chicken broth (optional)
  • 1 teaspoon Italian seasoning (oregano, basil, thyme blend)
  • ¼ teaspoon red pepper flakes (optional)
  • Salt and pepper to taste
  • A handful fresh basil, chopped (for garnish)

Instructions

  1. Bring a large pot of salted water to a boil. Add 8 ounces (225g) of pasta and cook according to package instructions until al dente, about 8–10 minutes. Reserve ½ cup (120ml) pasta water before draining.
  2. While pasta cooks, heat 2 tablespoons unsalted butter in a large skillet over medium-high heat. Season shrimp with salt, pepper, and ½ teaspoon Italian seasoning. Cook shrimp 2–3 minutes per side until pink and opaque. Remove shrimp and set aside.
  3. Lower heat to medium and add remaining 2 tablespoons butter to the skillet. Add minced garlic and cook for 1 minute until fragrant, stirring often.
  4. Add chopped sun-dried tomatoes and cook for another minute.
  5. Pour in white wine or chicken broth, scraping browned bits from the pan. Simmer for 2 minutes to reduce slightly.
  6. Stir in heavy cream, fresh spinach, and red pepper flakes if using. Cook until spinach wilts and sauce thickens slightly, about 3–4 minutes.
  7. Return shrimp to skillet, add drained pasta, and toss to combine.
  8. Stir in grated Parmesan cheese and toss again. Add reserved pasta water a tablespoon at a time if sauce is too thick.
  9. Taste and adjust seasoning with salt and pepper. Sprinkle chopped fresh basil on top and serve immediately with extra Parmesan on the side.

Notes

Keep heat moderate when cooking the sauce to avoid curdling the cream. Use reserved pasta water to adjust sauce consistency. Do not overcook shrimp to prevent rubbery texture. Fresh minced garlic provides best flavor. Fresh basil garnish adds a fragrant contrast.
