A rich, velvety soup made with russet potatoes, smoky bacon, sharp cheddar cheese, and fresh chives. It offers the taste of a loaded baked potato in a comforting bowl, ready in under 45 minutes.

  • 2 pounds russet potatoes, peeled and diced
  • 6 slices thick-cut bacon, cooked crisp and crumbled
  • 2 tablespoons unsalted butter
  • 1 medium yellow onion, finely diced
  • 3 cloves garlic, minced
  • 4 cups low-sodium chicken broth
  • 1 cup heavy cream
  • 1 cup sharp cheddar cheese, shredded
  • 1/4 cup fresh chives, chopped
  • Salt and black pepper to taste
  • Optional toppings: sour cream, extra bacon bits, hot sauce

Instructions

  1. Cook bacon in a large Dutch oven over medium heat until crisp. Remove with a slotted spoon, leaving about 1 tablespoon of fat in the pot.
  2. Add diced onion to the bacon fat and sauté for 5 minutes until softened. Add minced garlic and cook for 1 minute until fragrant.
  3. Add diced potatoes to the pot, stir to coat, and pour in chicken broth. Bring to a boil, then reduce heat to low, cover, and simmer for 15-20 minutes until potatoes are fork-tender.
  4. Remove from heat and use an immersion blender to blend about half of the potatoes to create a creamy base while leaving some chunks.
  5. Stir in heavy cream and gradually add shredded cheddar cheese, stirring constantly until melted and smooth. Do not boil vigorously.
  6. Season with salt and pepper to taste. Stir in half of the crumbled bacon and most of the chives. Serve hot topped with remaining bacon, chives, and sour cream.

Notes

Use russet potatoes for the best thick, creamy texture. Avoid pre-shredded cheese as it contains anti-caking agents that can make the soup grainy. If the soup is too thick, add extra broth or milk. If too thin, simmer uncovered to reduce. For a vegetarian version, omit bacon and use vegetable broth, adding smoked paprika for depth.
