Creamy Marry Me Chicken Recipe with Sun-Dried Tomatoes

  • 4 boneless, skinless chicken breasts (about 6 oz / 170 g each), pounded to even thickness
  • 2 tablespoons olive oil
  • 2 tablespoons unsalted butter
  • 3 garlic cloves, minced
  • 1/3 cup sun-dried tomatoes, chopped (packed in oil preferred)
  • 1 cup heavy cream (240 ml)
  • 1/2 cup chicken broth (120 ml)
  • 1/4 cup fresh basil, chopped
  • 1/3 cup freshly grated Parmesan cheese
  • 1/4 teaspoon red pepper flakes (optional)
  • Salt and freshly ground black pepper, to taste

Instructions

  1. Place each chicken breast between two pieces of plastic wrap and gently pound to about 1/2 inch (1.25 cm) thick.
  2. Season both sides of the chicken breasts with salt and pepper. Set aside.
  3. Heat olive oil and butter in a large skillet over medium-high heat until butter melts and foams (2-3 minutes).
  4. Add chicken breasts to the pan and cook without moving for 5-6 minutes until the bottom is golden and releases easily.
  5. Flip chicken and cook the other side for an additional 4-5 minutes until cooked through. Remove chicken to a plate and tent with foil.
  6. Reduce heat to medium and add minced garlic and chopped sun-dried tomatoes to the same pan. Stir for 1-2 minutes until fragrant.
  7. Pour in chicken broth, scraping up browned bits from the pan. Let simmer for 2 minutes to reduce slightly.
  8. Stir in heavy cream and grated Parmesan cheese. Simmer gently, stirring occasionally, until sauce thickens enough to coat the back of a spoon (about 5 minutes). Season with salt, pepper, and red pepper flakes if using.
  9. Return chicken breasts to the pan, nestle into the sauce, and spoon sauce over the top. Warm together for 2-3 minutes.
  10. Just before serving, sprinkle chopped fresh basil over the chicken.

Notes

Use room temperature chicken for even cooking and juicier texture. Simmer sauce gently to avoid curdling. If sauce is too thin, simmer longer; if too thick, add a splash of broth or cream. For dairy-free, substitute heavy cream with full-fat coconut milk and Parmesan with nutritional yeast. For gluten-free, ensure chicken broth is gluten-free.
