  • 2 tablespoons olive oil
  • 3 cloves garlic, minced
  • 1 cup sun-dried tomatoes, chopped (packed in oil)
  • 2 cups chicken broth or vegetable broth
  • 1 cup heavy cream or half-and-half
  • 4 ounces cream cheese, softened
  • 1/2 cup grated Parmesan cheese
  • Salt and freshly ground black pepper, to taste
  • 1 teaspoon dried Italian seasoning or fresh herbs like basil and parsley (optional)
  • Pinch of red pepper flakes (optional)

Instructions

  1. Heat the olive oil in a large skillet over medium heat for 1-2 minutes.
  2. Add minced garlic and chopped sun-dried tomatoes; sauté for 2-3 minutes until garlic is fragrant and tomatoes soften, avoiding browning the garlic.
  3. Pour in 2 cups of chicken or vegetable broth and add the dry pasta. Stir to submerge the pasta as much as possible and bring to a gentle boil.
  4. Reduce heat to medium-low and partially cover the pan with a lid. Cook the pasta for 12-15 minutes, stirring occasionally to prevent sticking, until pasta is tender and most broth is absorbed.
  5. Lower heat to low and stir in heavy cream and softened cream cheese until the cream cheese melts completely and the sauce is silky.
  6. Mix in grated Parmesan cheese, Italian seasoning or fresh herbs, salt, pepper, and red pepper flakes if using. Stir well and adjust seasoning to taste.
  7. Simmer gently for 2-3 minutes to thicken the sauce. Remove from heat and serve immediately, garnished with extra herbs or Parmesan if desired.

Notes

Use room temperature cream cheese to avoid lumps. Keep the lid partially on while cooking pasta to prevent watery sauce. Stir frequently to avoid sticking. For a lighter version, substitute heavy cream with milk and Greek yogurt added off-heat. Gluten-free pasta can be used as a substitute. If sauce is too thick, add broth or cream; if too thin, simmer longer.
