  • 1/4 cup red onion, thinly sliced
  • 1 generous handful fresh parsley, chopped
  • 1/2 cup tahini
  • 3 tablespoons fresh lemon juice
  • 1 small garlic clove, minced
  • 1/2 teaspoon ground cumin (for dressing)
  • 1/4 teaspoon salt (for dressing)
  • 1/4 cup ice-cold water (for dressing)
  • 1 tablespoon olive oil (for chickpeas)
  • 1 teaspoon ground cumin (for chickpeas)
  • 1/2 teaspoon smoked paprika (for chickpeas)
  • Salt and pepper to taste (for chickpeas)

Instructions

  1. Preheat the oven to 400°F (200°C). Line a baking sheet with parchment paper.
  2. Drain and rinse the chickpeas. Spread them on a clean kitchen towel and pat them dry thoroughly.
  3. Toss the dried chickpeas with 1 tablespoon olive oil, 1 teaspoon cumin, 1/2 teaspoon smoked paprika, and a generous pinch of salt and pepper. Spread in a single layer on the prepared baking sheet. Roast for 25-30 minutes, shaking the pan halfway through, until golden brown and slightly crunchy.
  4. While the chickpeas roast, rinse 1 cup quinoa in a fine-mesh strainer under cold water. Combine with 2 cups water and a pinch of salt in a medium pot. Bring to a boil, reduce heat to low, cover, and simmer for 15 minutes. Remove from heat and let sit, covered, for 5 minutes. Fluff with a fork.
  5. Make the tahini dressing: In a small bowl, combine 1/2 cup tahini, 3 tablespoons lemon juice, 1 minced garlic clove, 1/2 teaspoon cumin, and 1/4 teaspoon salt. Whisk until it forms a thick paste. Slowly drizzle in ice-cold water, about 1 tablespoon at a time, whisking constantly, until smooth and pourable (like heavy cream). Adjust salt or lemon to taste.
  6. Prep the fresh ingredients: Dice the cucumber, halve the cherry tomatoes, slice the olives, and thinly slice the red onion. If the onion is strong, soak slices in cold water for 10 minutes, then drain and pat dry. Dice the avocado just before serving.
  7. Assemble the bowls: Divide the warm quinoa among four bowls. Top with roasted chickpeas, cucumber, tomatoes, avocado, olives, red onion, and fresh parsley. Drizzle generously with tahini dressing.
  8. Serve immediately or store for later. For meal prep, keep dressing separate and add just before eating. Components keep in the fridge for up to 4 days.

Notes

Pat chickpeas very dry for crispiness. Let quinoa rest covered for 5 minutes after cooking. Emulsify dressing slowly with cold water. Season each layer as you go. For extra depth, toast cumin in a dry skillet for 30 seconds before using.
