  • 6 tablespoons (85g) unsalted butter, melted
  • 2 tablespoons (25g) granulated sugar (optional)
  • 8 ounces (225g) cream cheese, softened
  • 14 ounces (400g) sweetened condensed milk
  • ½ cup (120ml) fresh key lime juice
  • 1 teaspoon key lime zest
  • 1 cup (240ml) whipped cream, whipped to soft peaks

Instructions

  1. Combine graham cracker crumbs, melted unsalted butter, and granulated sugar (optional) in a bowl. Stir until crumbs are evenly coated and look like wet sand, about 3 minutes.
  2. Press the crust mixture firmly and evenly into the bottom and up the sides of a 9-inch (23 cm) pie dish. Chill in the fridge for at least 15 minutes to firm up.
  3. In a medium bowl, beat softened cream cheese with an electric mixer on medium speed until smooth and fluffy, about 2 minutes.
  4. Gradually pour in sweetened condensed milk, beating on low speed until combined and slightly thickened.
  5. Stir in fresh key lime juice and key lime zest; the mixture will firm up as the acid reacts with the dairy.
  6. Gently fold whipped cream into the lime mixture using a spatula, being careful not to overmix or deflate the whipped cream.
  7. Pour the filling into the chilled crust and smooth the top with a spatula. Cover loosely with plastic wrap.
  8. Refrigerate for at least 4 hours, preferably overnight, to let it set fully.
  9. Slice with a sharp knife dipped in hot water for clean cuts. Garnish with extra lime zest or whipped cream if desired.

Keep cream cheese at room temperature before mixing to avoid lumps. Press crust firmly and chill well to prevent crumbling. Use fresh key lime juice for best flavor. Fold whipped cream gently to keep filling light and airy. Chill pie overnight for best texture and flavor.
