  • 1 tablespoon brown sugar
  • ½ teaspoon vanilla extract
  • ¼ cup (30g) chopped raw pecans
  • 2 tablespoons unsalted butter
  • 2 tablespoons pure maple syrup
  • 1 teaspoon ground cinnamon
  • Pinch of salt

Instructions

  1. Brown the butter and toast pecans: In a small saucepan over medium heat, melt the unsalted butter. Cook, swirling gently, until it foams and turns a rich golden brown with a nutty aroma. Add chopped pecans, stir to coat, and toast for 1-2 minutes until fragrant and slightly crisp. Remove from heat and let cool slightly.
  2. Mix the oats base: In a jar or bowl, combine rolled oats, milk, Greek yogurt, brown sugar, vanilla extract, and salt. Stir well to dissolve the sugar.
  3. Add the pecans: Fold the browned butter pecans into the oat mixture, reserving a few for topping.
  4. Refrigerate overnight (at least 6 hours): Cover and place in the fridge to allow oats to soak and thicken.
  5. Prepare the maple cinnamon drizzle: Mix maple syrup with ground cinnamon in a small bowl. Adjust cinnamon to taste.
  6. Serve: Stir oats gently in the morning, top with reserved browned butter pecans, and drizzle with maple cinnamon mixture. Add a splash of milk if desired for a looser consistency.
