Ingredients

Scale
  • 1/2 cup (50g) rolled oats (old-fashioned)
  • 1/2 cup (120ml) milk of choice (whole milk, oat milk, or almond milk)
  • 2 tablespoons (32g) creamy peanut butter (natural preferred)
  • 1 medium ripe banana, mashed (about 100g)
  • 1 tablespoon (15ml) maple syrup or honey
  • 1 teaspoon (5g) chia seeds (optional)
  • 1/2 teaspoon vanilla extract
  • 1/8 teaspoon salt
  • For toppings (optional): sliced banana, drizzle of peanut butter, dark chocolate chips, chopped peanuts, cinnamon

Instructions

  1. Mash the banana: Peel the ripe banana and place it in a medium bowl or directly in your jar. Mash with a fork until mostly smooth with a few small lumps remaining.
  2. Combine wet ingredients: Add peanut butter, milk, maple syrup (or honey), and vanilla extract to the mashed banana. Stir until the peanut butter is fully incorporated and the mixture is smooth.
  3. Add dry ingredients: Pour in rolled oats, chia seeds (if using), and a pinch of salt. Stir until everything is evenly combined.
  4. Transfer to jar and refrigerate: Spoon the mixture into a mason jar or airtight container. Put the lid on tightly and give it a gentle shake. Refrigerate for at least 6 hours, but overnight (8-12 hours) is ideal.
  5. Add toppings and serve: In the morning, stir the oats. If too thick, add a splash of milk. Top with sliced banana, a drizzle of peanut butter, chocolate chips, and a sprinkle of cinnamon. Serve cold or let sit at room temperature for 10 minutes.

Notes

Use rolled oats, not instant or steel-cut. Ripe bananas with brown spots provide the best sweetness. If using natural peanut butter, stir well before measuring. For best texture, do not over-mash the banana. Add toppings just before serving to maintain texture. The oats can be stored in the refrigerator for up to 5 days.
