  • 1 tsp baking powder
  • 1 tsp cinnamon
  • 1/2 tsp ginger
  • 1/4 tsp nutmeg
  • 1/2 tsp salt
  • 8 oz block full-fat cream cheese, softened
  • 1/4 cup confectioners’ sugar
  • 1 tsp vanilla extract

Instructions

  1. Preheat oven to 350°F (175°C). Grease a 9×5 inch loaf pan and line with parchment paper.
  2. Mash ripe bananas in a large bowl until mostly smooth.
  3. Cream the softened butter and granulated sugar into the bananas until light and fluffy.
  4. Add eggs one at a time, mixing well after each addition, then mix in vanilla extract.
  5. In a separate bowl, whisk together flour, baking soda, baking powder, cinnamon, ginger, nutmeg, and salt.
  6. Add dry ingredients to wet ingredients in three additions, alternating with pumpkin puree. Mix until just combined.
  7. Beat cream cheese, confectioners’ sugar, and vanilla until smooth.
  8. Pour half the batter into the pan. Dollop cream cheese mixture on top and swirl gently with a knife.
  9. Add remaining batter on top, spreading gently.
  10. Bake for 55-65 minutes until a toothpick inserted in the center comes out clean.
  11. Cool in the pan for 10 minutes, then transfer to a wire rack to cool completely before slicing.

Notes

Ensure cream cheese is at room temperature to prevent chunks or melting into the batter. Do not overmix the batter to avoid a dense texture. For gluten-free, use a 1:1 gluten-free flour blend. For dairy-free, use vegan butter and cream cheese blocks.
