  • 1/2 cup buffalo hot sauce (120ml)
  • 1 cup shredded cheddar cheese (115g)
  • 1 tablespoon ranch seasoning mix

Instructions

  1. Prepare the chicken: shred about 3 cups (450g) of cooked chicken using forks or hands. Rotisserie chicken works well. (10 minutes)
  2. Combine cream cheese and hot sauce: soften cream cheese by microwaving 20-30 seconds if needed, then stir in 1/2 cup buffalo hot sauce until blended. (5 minutes)
  3. Add shredded chicken and ranch seasoning: mix shredded chicken and 1 tablespoon ranch seasoning into the cream cheese mixture until evenly coated. (5 minutes)
  4. Transfer to slow cooker: pour mixture into slow cooker and spread evenly. (2 minutes)
  5. Add shredded cheddar cheese: sprinkle 1 cup shredded cheddar cheese over the top. Optionally stir some in for extra cheesiness. (2 minutes)
  6. Cook on low: cover and cook on low for 2 hours without opening the lid frequently. (2 hours)
  7. Stir and serve: stir dip to combine melted cheese and chicken. Serve warm with celery sticks, tortilla chips, or crusty bread. (5 minutes)

Notes

If dip is too thick after cooking, stir in a splash of milk or more hot sauce to reach desired consistency. If too runny, cook uncovered on low for an extra 15 minutes to thicken. Softening cream cheese before mixing prevents lumps. Use shredded rotisserie chicken for best flavor and texture. Adjust buffalo sauce amount to control heat level. Can be baked in oven at 350°F for 20 minutes as an alternative.
