This crispy air fryer popcorn shrimp recipe delivers golden, crunchy, and juicy shrimp with minimal oil, perfect for a quick snack or appetizer that’s healthier than deep-fried versions.

Ingredients

Scale
  • 1 pound medium shrimp, peeled and deveined, tails removed (fresh or thawed frozen)
  • ½ cup all-purpose flour (can substitute almond flour for gluten-free)
  • ¼ cup cornstarch
  • 2 large eggs, beaten, room temperature
  • 1 cup panko breadcrumbs (Japanese-style preferred)
  • 1 tsp garlic powder
  • 1 tsp smoked paprika
  • ½ tsp salt
  • ½ tsp black pepper
  • Cooking spray or olive oil spray
  • Lemon wedges (optional, for serving)
  • Dipping sauces such as cocktail sauce, spicy mayo, or tartar sauce

Instructions

  1. Pat the peeled and deveined shrimp dry with paper towels.
  2. In a shallow bowl, combine flour, cornstarch, garlic powder, smoked paprika, salt, and black pepper; mix well.
  3. In another bowl, whisk the eggs until smooth.
  4. Pour panko breadcrumbs into a third bowl; optionally add a pinch of salt or dried herbs.
  5. Double-dip each shrimp by coating lightly in seasoned flour, then dipping into the egg, and finally pressing into the panko breadcrumbs. Place breaded shrimp on a plate.
  6. Preheat the air fryer to 400°F (200°C) for about 3 minutes.
  7. Spray the air fryer basket with cooking spray to prevent sticking. Arrange shrimp in a single layer without crowding; cook in batches if necessary.
  8. Air fry shrimp for 7-9 minutes, flipping halfway through, until golden brown and crispy. Add 1-2 minutes if extra crunch is desired, watching closely to avoid overcooking.
  9. Serve immediately with lemon wedges and your choice of dipping sauces.

Notes

Pat shrimp dry before breading for better adhesion. Lightly spray breaded shrimp with oil before air frying to mimic deep-fried texture. Do not overcrowd the air fryer basket; cook in batches for even crispiness. Flipping shrimp halfway through cooking is essential. For gluten-free, substitute flour and panko with almond or chickpea flour and gluten-free panko breadcrumbs. Leftovers keep best in an airtight container in the refrigerator for up to 2 days; reheat in air fryer at 350°F for 3-4 minutes to restore crispiness.
