  • 1 cup unfiltered apple cider
  • 1/4 cup granulated white sugar
  • 2 whole cinnamon sticks
  • 1 tablespoon ground cinnamon
  • 1 bottle (750ml) Brut sparkling wine or champagne
  • Optional: Thin apple slices or small cinnamon stick for garnish

Instructions

  1. Pour 1 cup of apple cider, 1/4 cup of sugar, and 2 cinnamon sticks into a small, heavy-bottomed saucepan.
  2. Heat over medium-high, stirring occasionally until the sugar dissolves (about 2 minutes).
  3. Reduce heat to medium-low and simmer gently for 10-15 minutes until the liquid reduces by half and coats the back of a spoon thickly.
  4. Remove from heat and strain the liquid through a fine-mesh strainer into a heatproof bowl to remove cinnamon sticks and pulp.
  5. Let the cider reduction cool completely to room temperature.
  6. Mix 1 tablespoon of ground cinnamon with 1/4 cup of granulated sugar in a shallow bowl.
  7. Pour a small amount of the cooled cider reduction into a separate shallow dish.
  8. Dip the rim of a champagne flute or coupe glass into the cider reduction to coat evenly.
  9. Immediately dip the wet rim into the cinnamon sugar mixture, rotating to coat evenly.
  10. Tap off excess sugar and place the glass upside down on a paper towel to dry completely (5-10 minutes).
  11. Once rims are dry, pour 1/3 cup of the chilled cider reduction into each glass.
  12. Top with 1/2 cup of chilled sparkling wine.
  13. Garnish with an apple slice or cinnamon stick and serve immediately.
