This recipe delivers perfectly crispy skin and juicy meat with a sweet and savory honey garlic glaze, making it an easy and flavorful weeknight dinner.

  • 4 bone-in, skin-on chicken thighs
  • 1/4 cup (60 ml) honey
  • 2 tablespoons (30 ml) soy sauce (low-sodium recommended)
  • 1 tablespoon (15 ml) apple cider vinegar
  • 3 cloves garlic, minced
  • 1 tablespoon (15 ml) olive oil
  • Salt (kosher or sea salt), to taste
  • Freshly cracked black pepper, to taste
  • Optional: 1/4 teaspoon red pepper flakes

Instructions

  1. Preheat your oven to 425°F (220°C).
  2. Pat the chicken thighs dry with paper towels. Season generously with salt and freshly cracked black pepper on both sides. Let them sit for about 5 minutes.
  3. In a small bowl, whisk together honey, soy sauce, apple cider vinegar, minced garlic, and red pepper flakes if using.
  4. Drizzle olive oil over a rimmed baking sheet or roasting pan. If using a wire rack, place it on the sheet and brush with a bit of oil to prevent sticking.
  5. Place the chicken thighs skin side up on the wire rack or directly on the baking sheet. Brush the skin lightly with olive oil again if desired for extra crispness.
  6. Bake for 25 minutes until the skin starts to crisp and brown.
  7. Remove the chicken from the oven and brush the honey garlic glaze generously over each thigh.
  8. Return to the oven and bake for another 10-15 minutes until the glaze bubbles and thickens and the internal temperature reaches 165°F (74°C).
  9. Remove from oven and let rest for 5 minutes before serving to keep juices locked in and skin crispy.
  10. Serve hot, spooning any extra glaze from the pan over the chicken.

Notes

Pat chicken dry thoroughly for crispy skin. Apply glaze later in cooking to prevent burning. If glaze browns too fast, cover loosely with foil for last 5 minutes. Reheat leftovers in oven or toaster oven at 375°F for 10 minutes to keep skin crispy. For gluten-free, substitute soy sauce with tamari or coconut aminos. Boneless thighs can be used but reduce baking time by 5-10 minutes.
