  • ¼ teaspoon freshly ground black pepper
  • Zest of 1 lemon (optional)
  • 2 tablespoons (30 ml) extra virgin olive oil
  • Wooden or metal skewers (wooden soaked for at least 30 minutes)

Instructions

  1. Cut chicken into uniform 1.5-inch cubes for even cooking.
  2. In a medium bowl, combine garlic powder, grated Parmesan, dried Italian herbs, salt, black pepper, and lemon zest if using.
  3. Drizzle olive oil over chicken cubes and toss to coat evenly.
  4. Add Parmesan seasoning mixture and gently toss until every piece is coated with the cheesy crust.
  5. Thread chicken pieces onto 6-8 skewers, leaving space between pieces for heat circulation.
  6. Preheat grill to medium-high heat (about 400°F). If using a grill pan, preheat over medium-high heat for 5 minutes.
  7. Grill skewers for 12-15 minutes total, turning every 3-4 minutes, until golden crispy crust forms and internal temperature reaches 165°F.
  8. Remove from heat and let rest for 5 minutes before serving to lock in juices.
