Crispy Roasted Asparagus with Parmesan and Lemon Zest

A quick and easy side dish featuring fresh asparagus roasted to crispy perfection with parmesan cheese and bright lemon zest. Perfect for busy weeknights or entertaining guests.

  • 1 pound fresh asparagus, medium-thick stalks
  • 2 tablespoons extra virgin olive oil
  • 1/2 teaspoon garlic powder
  • Salt and freshly ground black pepper, to taste
  • 1/2 cup finely grated parmesan cheese
  • Zest of 1 lemon
  • Optional: red pepper flakes
  • Optional: fresh herbs such as parsley or thyme

Instructions

  1. Preheat your oven to 425°F (220°C).
  2. Rinse and pat dry 1 pound of asparagus. Trim the woody ends by snapping or cutting off the bottom 1-2 inches.
  3. In a mixing bowl, drizzle 2 tablespoons of extra virgin olive oil over the asparagus. Add 1/2 teaspoon garlic powder, salt, and freshly ground black pepper to taste. Toss well to coat evenly.
  4. Arrange the asparagus in a single layer on a parchment-lined or lightly greased baking sheet, spacing them so they aren’t crowded.
  5. Sprinkle 1/2 cup of finely grated parmesan evenly over the asparagus.
  6. Roast in the oven for 12-15 minutes, turning the asparagus halfway through for even browning. Look for golden, crispy edges on the cheese and tender stalks.
  7. As soon as the asparagus comes out of the oven, zest 1 lemon over the top.
  8. Serve immediately, optionally sprinkling with fresh herbs or a pinch of red pepper flakes.

Notes

Dry asparagus thoroughly before roasting to ensure crispiness. Space asparagus evenly on the baking sheet to avoid steaming. Use finely grated parmesan for best crispiness. If parmesan burns before asparagus is tender, loosely cover tips with foil. Add lemon zest after roasting to preserve brightness.
