  • 2 tablespoons extra virgin olive oil
  • 1/4 cup (25g) grated Parmesan cheese
  • Zest of 1 medium lemon
  • Freshly ground black pepper, to taste
  • Sea salt, to taste
  • 1/2 teaspoon garlic powder (optional)

Instructions

  1. Preheat your oven to 425°F (220°C).
  2. Rinse the asparagus and pat dry with a kitchen towel. Trim about 1 to 2 inches off the woody ends.
  3. Place asparagus in a large bowl. Add olive oil, garlic powder, sea salt, and black pepper to taste. Toss to coat evenly.
  4. Line a baking sheet with parchment paper or a silicone baking mat if using. Arrange asparagus in a single layer with space between each spear.
  5. Roast in the preheated oven for 8 minutes until asparagus starts to soften but remains bright green.
  6. Remove the baking sheet, sprinkle grated Parmesan evenly over the asparagus, then add lemon zest. Gently toss to coat without breaking the spears.
  7. Return to the oven and roast for an additional 4-5 minutes until cheese melts and turns golden brown and asparagus tips crisp up.
  8. Remove from oven, taste, and add more salt or pepper if needed. Serve immediately.

Notes

Pat asparagus dry before oiling to ensure crispiness. Spread spears in a single layer to avoid steaming. Watch the oven closely when adding parmesan to prevent burning. For a smoky char, broil for the last 1-2 minutes with the door slightly open. Lemon zest adds a fresh zing; optionally add a squeeze of lemon juice before serving. Variations include adding red pepper flakes for heat or using nutritional yeast for a vegan version.
