  • 8 large eggs
  • Salt and pepper to taste
  • 2 tablespoons butter (for cooking eggs)
  • 12 slices bacon
  • 8 oz (225g) sliced ham
  • 8 oz (225g) mixed cheese slices (sharp cheddar, Swiss, pepper jack)
  • 2 ripe avocados (sliced or mashed)
  • 2 medium tomatoes (thinly sliced)
  • 2 cups spinach or arugula
  • Salted butter (for spreading on croissants or melting over fillings)
  • Optional condiments: mayonnaise, mustard, hot sauce, aioli

Instructions

  1. Preheat oven to 400°F (200°C). Line a baking sheet with foil and place a wire rack on top. Lay bacon slices on the rack without overlapping. Bake for 15-20 minutes or until crispy, flipping halfway through if not using a rack. Transfer bacon to paper towels to drain.
  2. While bacon cooks, arrange croissants on a separate baking sheet and warm them in the oven for 5 minutes just before serving.
  3. Crack eggs into a bowl, add salt and pepper, and whisk until combined. Heat butter in a nonstick skillet over medium-low heat. Pour in eggs and stir gently with a spatula, scraping the pan’s bottom to form soft curds. Remove from heat when eggs are slightly undercooked and transfer to a warm bowl.
  4. Slice cheese, ham, tomato, and avocado. Wash and dry greens. Arrange all toppings in separate bowls or on platters for easy access.
  5. Set up the sandwich bar by arranging croissants, eggs, bacon, ham, cheeses, and veggies on the counter or table. Include small plates, napkins, and condiments. Encourage everyone to build their own croissant sandwich.

Notes

To keep everything warm longer, cover cooked eggs and bacon loosely with foil. Prepping most ingredients ahead and warming just before serving is key.
