Instructions

  1. Preheat your oven to 325°F (160°C). Line a baking sheet with parchment paper or a silicone baking mat to prevent sticking.
  2. In a large bowl, combine 2 cups old-fashioned rolled oats, 1 cup roughly chopped raw walnuts, and 2 tablespoons chia seeds.
  3. In a small bowl, whisk together 1/4 cup maple syrup, 3 tablespoons light olive oil, 1 teaspoon ground cinnamon, and 1/2 teaspoon sea salt until smoothly combined.
  4. Pour the wet mixture over the oats and nuts. Use a wooden spoon or spatula to mix thoroughly, ensuring every oat is coated.
  5. Transfer the granola mixture to the prepared baking sheet, spreading it out in an even layer to promote uniform toasting.
  6. Bake for 20-25 minutes, stirring every 10 minutes to prevent burning and encourage even browning. The granola should turn golden and smell toasty.
  7. Remove from oven and allow granola to cool fully on the baking sheet—it will crisp up as it cools.
  8. While the granola cools, in a medium bowl, combine 1 cup roughly chopped raw almonds, 1 cup halved raw cashews, 1/2 cup shelled sunflower seeds, 1/2 cup dried cranberries, 1/4 cup mini dark chocolate chips, and 1/3 cup unsweetened coconut flakes.
  9. Once the granola is cool, mix it gently with the trail mix ingredients or pack separately in compartments to keep textures distinct.
