Instructions

  1. Preheat oven to 350°F (175°C). Prepare red velvet cake batter according to package or homemade recipe instructions. Pour into greased 9×13-inch pan and bake for 25-30 minutes or until a toothpick comes out clean. Cool completely on a wire rack (about 1 hour).
  2. In a large bowl, beat softened cream cheese until smooth. In a separate chilled bowl, whip heavy cream with powdered sugar and vanilla extract until stiff peaks form. Gently fold whipped cream into cream cheese until silky and fully incorporated (about 10 minutes).
  3. Wash and dry strawberries and blueberries thoroughly. Slice strawberries thinly for layering.
  4. Cut cooled red velvet cake into 1-inch cubes. In a trifle bowl, layer red velvet cubes evenly, then spread a generous layer of cream cheese mousse. Add a layer of sliced strawberries, then another cake layer, mousse, and blueberries. Repeat layers until bowl is filled, finishing with mousse on top.
  5. Garnish with additional berries, white chocolate shavings, and fresh mint leaves if desired. Cover and refrigerate for at least 2 hours before serving to let flavors meld and mousse set.

Ensure the red velvet cake is completely cooled before layering to prevent mousse from melting. Use chilled heavy cream for best mousse texture. Thaw and drain frozen berries thoroughly if using.
