  • 12 oz (340 g) white chocolate chips or chopped white chocolate
  • 1 cup (about 150 g) fresh strawberries, hulled and sliced

Instructions

  1. Line a 9×13 inch (23×33 cm) baking sheet with parchment paper or a silicone mat.
  2. Soften the cream cheese at room temperature until soft but not melted. Alternatively, cut into cubes and microwave for 10 seconds.
  3. Hull and slice the strawberries into roughly 1/4 inch thick slices. If using frozen, thaw and drain well.
  4. Gently fold the sliced strawberries into the softened cream cheese, keeping the berries intact.
  5. Melt the white chocolate in a microwave-safe bowl or double boiler in 15-20 second bursts, stirring often until smooth.
  6. Mix about two-thirds of the melted white chocolate into the cream cheese and strawberry mixture quickly before it sets.
  7. Pour the combined mixture onto the prepared baking sheet and spread evenly to about 1/4 inch thickness.
  8. Drizzle the remaining white chocolate over the top in a decorative pattern.
  9. Freeze the bark for at least 2 hours until firm.
  10. Cut into bite-sized pieces or shards with a sharp knife and store leftovers in an airtight container in the freezer.

Melt white chocolate slowly to avoid seizing. Fold strawberries gently to keep texture. Use silicone mats for easy cleanup.
