  • 1 ½ cups (about 225g) candy corn (fresh and soft)
  • ¼ cup (50g) white chocolate chips (optional, for drizzling)
  • 1 tablespoon sprinkles (fall colors like orange, yellow, brown)

Instructions

  1. Preheat your oven to 350°F (175°C). Line your baking sheet with parchment paper, leaving a little overhang on the sides for easy lifting.
  2. In a large mixing bowl, beat the softened butter and granulated sugar together on medium speed until light and fluffy—about 3 to 4 minutes. Scrape down the sides of the bowl halfway through.
  3. Add the egg and vanilla extract, then beat on low until just combined. Don’t overmix.
  4. In a separate bowl, whisk together the flour, baking powder, and salt. Gradually add this to the wet mixture, mixing on low speed until a soft dough forms. If it feels too dry, add a teaspoon of milk.
  5. Transfer the dough to your prepared baking sheet. Using your hands or a rolling pin, press it into an even rectangle about ¼-inch thick.
  6. Gently press the candy corn into the dough in rows, alternating colors if desired. Press them in just enough so they stick—about halfway.
  7. Bake for 18 to 22 minutes, or until the edges are golden brown and the center is set. The candy corn will look slightly puffed and shiny. Don’t overbake.
  8. Let the bark cool on the baking sheet for 10 minutes, then transfer it (parchment and all) to a cooling rack. Let it cool completely—at least 1 hour.
  9. Once cooled, melt the white chocolate chips in the microwave in 20-second intervals, stirring between each. Drizzle over the bark using a fork or a small piping bag. Add sprinkles immediately before the chocolate sets.
  10. Once the white chocolate is set, use a sharp knife to cut the bark into irregular pieces.
