These cheese quesadilla dippers are quick, easy, and perfect for lunchboxes. Made with simple ingredients like tortillas and cheese, they stay crispy when cooled on a wire rack before packing.

  • 4 (8-inch) flour tortillas
  • 1 cup shredded mozzarella cheese
  • 1/2 cup shredded cheddar cheese
  • 2 tablespoons unsalted butter, softened
  • Salsa, for dipping
  • Sour cream, for dipping (optional)

Instructions

  1. Take tortillas out of fridge 5 minutes before starting. Shred cheese if using block cheese.
  2. Heat a non-stick skillet over medium heat for about 2 minutes.
  3. Spread about 1/2 teaspoon softened butter evenly over one side of each tortilla.
  4. Place one tortilla butter-side down in the skillet. Sprinkle about 1/4 cup of the mozzarella-cheddar blend evenly over the entire surface, leaving a small border around the edge. Place the second tortilla on top, butter-side up.
  5. Cook for 2-3 minutes, or until the bottom is golden brown and crispy. Do not press down with spatula.
  6. Carefully flip the quesadilla and cook for another 2-3 minutes until the second side is golden brown and cheese is fully melted.
  7. Transfer the cooked quesadilla to a wire cooling rack immediately. Let cool completely, at least 5 minutes.
  8. Once cooled, use a pizza cutter or sharp knife to cut the quesadilla into 1-inch wide strips (about 6-8 strips per quesadilla).
  9. Pack strips in a lunchbox container with a small cup of salsa or sour cream on the side. Keep sauce separate until lunchtime.

Notes

Letting quesadillas cool completely on a wire rack before packing is crucial to prevent sogginess. Use medium heat to avoid burning the tortilla before cheese melts. Softened butter spreads more evenly than cold butter. For best results, use freshly shredded cheese.
