A quick and easy breakfast casserole combining savory ham, crisp-tender broccoli, and a blend of sharp cheddar and mozzarella cheeses for a comforting and satisfying morning meal.

Ingredients

Scale
  • 6 large eggs (room temperature)
  • 1 cup whole milk (or almond milk for dairy-free)
  • 1/2 teaspoon salt
  • 1/4 teaspoon black pepper
  • 1/4 teaspoon garlic powder (optional)
  • 2 cups cooked ham, diced
  • 2 cups broccoli florets (fresh or frozen, thawed and drained if frozen)
  • 1 1/2 cups shredded sharp cheddar cheese
  • 1 cup shredded mozzarella cheese
  • Optional add-ins:
  • 1/4 cup finely chopped onion or green onion
  • 1/2 teaspoon smoked paprika
  • Fresh herbs like parsley or chives for garnish

Instructions

  1. Preheat oven to 350°F (175°C). Lightly grease a 9×13-inch baking dish with butter or non-stick spray.
  2. Steam 2 cups of broccoli florets until just tender, about 3-4 minutes. Drain and set aside to cool slightly.
  3. Dice the ham into bite-sized pieces.
  4. In a large mixing bowl, whisk together 6 large eggs and 1 cup whole milk until fully combined. Add 1/2 teaspoon salt, 1/4 teaspoon black pepper, and 1/4 teaspoon garlic powder if using. Whisk until smooth and slightly frothy.
  5. Stir in the steamed broccoli, diced ham, 1 1/2 cups sharp cheddar cheese, and 1 cup mozzarella cheese. Fold in optional onions or smoked paprika if desired.
  6. Pour the mixture evenly into the prepared baking dish and gently tap to settle.
  7. Bake uncovered for 35-40 minutes until the casserole puffs slightly, the top is golden and bubbly, and a knife inserted in the center comes out clean.
  8. Let the casserole rest for 5-10 minutes before slicing and serving.

Notes

Use room temperature eggs for fluffier texture. Do not oversteam broccoli to keep it crisp-tender. Tent with foil if edges brown too quickly. Rest casserole before cutting for easier serving. For dairy-free, substitute dairy-free cheese and almond or oat milk. Frozen broccoli must be thawed and drained to avoid sogginess.
