This easy copycat Starbucks pumpkin cream cold foam coffee is a quick and delicious homemade version of the popular fall drink. Made with simple ingredients like heavy cream, pumpkin puree, and pumpkin pie spice, it comes together in under 5 minutes with no special equipment needed.

  • 2 tablespoons (30 ml) heavy cream
  • 1 tablespoon (15 ml) pumpkin puree
  • ½ teaspoon (2.5 ml) vanilla extract
  • 1 tablespoon (12 grams) granulated sugar
  • ¼ teaspoon (0.5 grams) pumpkin pie spice
  • 1 pinch salt (about 1/16 teaspoon)
  • 1 cup (240 ml) strong cold brew coffee
  • Ice cubes (enough to fill glass)

Instructions

  1. Brew and chill your coffee. If using cold brew, you’re ahead. Otherwise, brew a strong cup of coffee (about 1 cup / 240 ml) and let it cool to room temperature, then refrigerate until cold (about 30 minutes or overnight).
  2. In a mason jar, combine 2 tablespoons (30 ml) cold heavy cream, 1 tablespoon (15 ml) pumpkin puree, ½ teaspoon (2.5 ml) vanilla extract, 1 tablespoon (12 grams) granulated sugar, ¼ teaspoon (0.5 grams) pumpkin pie spice, and a tiny pinch of salt.
  3. Seal the jar tightly with the lid.
  4. Shake vigorously for 45 seconds to 1 minute until the mixture doubles in volume and becomes thick and frothy. If still runny, shake another 15-20 seconds.
  5. Fill a serving glass with a generous handful of ice cubes.
  6. Slowly pour the chilled coffee over the ice, filling the glass about three-quarters full.
  7. Using a spoon, gently dollop the pumpkin cream foam over the coffee to create a layered effect.
  8. Optional: Sprinkle a tiny pinch of pumpkin pie spice or cinnamon flakes on top.
  9. Serve immediately.

Notes

Use cold ingredients for best foam. Don’t over-shake (max 90 seconds) or cream may turn to butter. Adjust sweetness to taste. Foam is best fresh but can be stored in fridge for up to 2 hours; re-shake before using. For dairy-free, use full-fat canned coconut cream (chilled). For hot version, spoon foam over hot coffee or espresso.
