This easy copycat Starbucks pumpkin cream cold foam is proof that you don’t need to spend five dollars a day to enjoy a really good coffee drink. It’s simple, fast, and honestly better than the original.

Ingredients

  • ½ cup heavy cream
  • ¼ cup oat milk
  • 2 tablespoons pumpkin puree
  • 2 tablespoons vanilla syrup
  • ½ teaspoon pumpkin pie spice
  • Pinch of salt
  • Cold brew or strong coffee (for serving)

Instructions

  1. Chill your ingredients and tools. Put your heavy cream, oat milk, and even your jar in the fridge for at least 15 minutes before starting.
  2. Mix the pumpkin base. In a small bowl, combine 2 tablespoons pumpkin puree, ½ teaspoon pumpkin pie spice, and a pinch of salt. Stir until smooth.
  3. Add the liquids. Pour ½ cup heavy cream, ¼ cup oat milk, and 2 tablespoons vanilla syrup into your jar. Add the pumpkin mixture.
  4. Shake vigorously. Screw the lid on tight and shake for about 45 seconds to 1 minute. You’re looking for the mixture to double in volume and become thick and frothy.
  5. Check the texture. Open the jar and look at the foam. It should be light and airy, with small bubbles. If it’s still runny, shake for another 20 seconds.
  6. Prepare your coffee. Fill a glass with ice and pour in your cold brew or strong coffee, leaving about 2 inches of space at the top.
  7. Pour the cold foam. Slowly spoon or pour the cold foam over the back of a spoon onto the coffee. This helps it float on top instead of sinking.
  8. Finish and serve. Sprinkle a tiny pinch of pumpkin pie spice on top for looks. Serve immediately, preferably with a straw so you can drink the foam and coffee together.

Notes

Cold ingredients are non-negotiable for best foam. Don’t over-shake or foam can break. Pour foam over back of a spoon to keep it floating. Serve immediately as foam deflates after about 5 minutes. Use 100% pure pumpkin puree, not pumpkin pie filling. The unshaken mixture can be stored in the fridge for up to 24 hours.
