  • 2 large English cucumbers (or 3 medium garden cucumbers)
  • ¼ cup fresh dill, finely chopped
  • ½ cup full-fat sour cream
  • 2 tablespoons mayonnaise
  • 1 tablespoon white vinegar (or apple cider vinegar)
  • ½ teaspoon granulated sugar
  • 1 teaspoon kosher salt (plus more for salting cucumbers)
  • ¼ teaspoon freshly ground black pepper
  • ¼ cup thinly sliced red onion (optional)

Instructions

  1. Wash the cucumbers thoroughly. If using English cucumbers, leave the skin on. If using garden cucumbers, peel them first. Slice the cucumbers into thin rounds, about ⅛-inch thick.
  2. Place the sliced cucumbers in a colander set over a bowl or in the sink. Sprinkle them with 1 teaspoon of kosher salt and toss gently to coat. Let them sit for 15-20 minutes to draw out excess moisture.
  3. After 15-20 minutes, gently press the cucumbers with a paper towel or the back of a spoon to release more liquid. Let them drain for another 5 minutes. Do not rinse.
  4. In a medium mixing bowl, combine the sour cream, mayonnaise, white vinegar, sugar, and black pepper. Whisk until smooth and well combined. Taste and adjust seasoning if needed.
  5. Stir in the chopped fresh dill and thinly sliced red onion (if using). Let the dressing sit for a minute to meld flavors.
  6. Add the drained cucumbers to the bowl with the dressing. Use a rubber spatula to gently fold everything together until the cucumbers are evenly coated.
  7. Cover the bowl with plastic wrap and refrigerate for at least 30 minutes to allow flavors to come together.
  8. Give the salad a final stir before serving. Garnish with extra fresh dill on top. Serve cold or at room temperature.

Notes

Do not skip the salting step—it prevents the salad from becoming watery. For best results, use fresh dill; dried dill is not recommended. The salad improves after resting in the fridge for a few hours. Store leftovers in an airtight container in the refrigerator for up to 3 days. Do not freeze.
