Easy Creamy Grilled Zucchini Roll-Ups with Goat Cheese

These zucchini roll-ups combine smoky grilled zucchini with creamy goat cheese for a quick, elegant appetizer that’s perfect for entertaining or a light snack.

  • 8 ounces soft goat cheese (chèvre)
  • 1 teaspoon garlic powder or finely minced fresh garlic
  • 1 tablespoon chopped fresh basil or mint (optional)
  • Zest of half a lemon
  • Salt and black pepper to taste
  • Olive oil (extra virgin) for brushing
  • Honey or balsamic glaze (optional, for drizzling)

Instructions

  1. Wash and dry the zucchinis. Using a mandoline or sharp knife, slice lengthwise into thin strips about 1/8 inch (3 mm) thick, yielding roughly 18–20 strips.
  2. In a mixing bowl, combine the goat cheese, garlic powder (or fresh garlic), chopped herbs, and lemon zest. Mix until creamy and well blended. Season with salt and pepper to taste.
  3. Preheat the grill or grill pan to medium-high heat (about 400°F / 200°C). Lightly brush both sides of the zucchini strips with olive oil.
  4. Grill the zucchini strips for about 2 minutes per side until tender with clear grill marks. Avoid overcooking to prevent tearing when rolling.
  5. Lay each zucchini strip flat on a plate. Spread about 1 tablespoon of the goat cheese mixture evenly along one edge. Carefully roll up the strip starting from the cheese-covered edge to form a neat cylinder.
  6. Arrange the roll-ups on a serving platter. Optionally, drizzle lightly with honey or balsamic glaze and garnish with extra fresh herbs.

Notes

Slice zucchini about 1/8 inch thick for best texture. Oil both sides before grilling to prevent sticking. Work quickly while zucchini strips are warm to roll easily. If zucchini feels stiff, briefly steam before grilling. For indoor cooking, a grill pan or cast iron pan works well. Variations include using cream cheese, ricotta, or vegan cheese alternatives. Roasting zucchini strips at 425°F for 5-7 minutes per side is a good alternative if no grill is available.
