  • 2 tablespoons Dijon mustard (30 ml)
  • 1 tablespoon olive oil (15 ml)
  • 1 teaspoon garlic powder (5 grams)
  • 1 teaspoon smoked paprika (5 grams)
  • 1 teaspoon salt
  • ½ teaspoon black pepper
  • Optional: 1 tablespoon chopped fresh parsley or thyme for garnish

Instructions

  1. Preheat your oven to 425°F (220°C).
  2. Pat the chicken thighs dry with paper towels to remove moisture.
  3. Season both sides of the chicken thighs evenly with salt, black pepper, garlic powder, and smoked paprika.
  4. Place the chicken on a wire rack set over a rimmed baking sheet, skin-side up with space between each piece.
  5. Bake the thighs uncovered for 20 minutes.
  6. While baking, whisk together honey, Dijon mustard, and olive oil in a mixing bowl until smooth.
  7. Remove the baking sheet from the oven and brush the glaze generously over each thigh.
  8. Return the chicken to the oven and bake for an additional 15-20 minutes until the internal temperature reaches 165°F (74°C) and the glaze is sticky and caramelized.
  9. Let the chicken rest for 5 minutes before serving.
  10. Garnish with fresh parsley or thyme if desired and serve immediately.
