  • 1.5 to 2 pounds flank steak or sirloin steak, thinly sliced against the grain
  • 3 cups broccoli florets (about 1 large head)
  • ½ cup low-sodium soy sauce
  • ¼ cup packed brown sugar
  • ½ cup low-sodium beef broth
  • 4 cloves garlic, minced
  • 1 tablespoon fresh ginger, grated
  • 1 tablespoon sesame oil (optional)
  • 2 tablespoons cornstarch
  • 2 tablespoons cold water
  • ½ teaspoon red pepper flakes (optional)
  • Cooked white or brown rice, for serving
  • Toasted sesame seeds and sliced green onions, for garnish

Instructions

  1. Pat the flank steak dry with paper towels. Slice against the grain into thin strips, about ¼-inch thick. Season lightly with salt and pepper.
  2. Heat 1 tablespoon vegetable oil in a large skillet over medium-high heat. Working in batches, sear the beef strips for 1-2 minutes per side until browned. Transfer to the slow cooker.
  3. In a small bowl, whisk together soy sauce, brown sugar, beef broth, minced garlic, grated ginger, sesame oil, and red pepper flakes (if using). Pour over the beef in the slow cooker.
  4. Cover and cook on LOW for 2.5 to 3 hours (or on HIGH for 1.5 to 2 hours).
  5. Add the broccoli florets to the slow cooker. Stir gently to coat. Cover and cook on LOW for another 20-30 minutes, until broccoli is bright green and tender-crisp.
  6. In a small bowl, whisk together cornstarch and cold water until smooth. Pour into the slow cooker and stir gently. Cook uncovered on HIGH for 5-10 minutes until sauce thickens and becomes glossy.
  7. Taste and adjust seasoning with more soy sauce, brown sugar, or red pepper flakes as desired.
  8. Serve immediately over steamed rice. Garnish with toasted sesame seeds and sliced green onions.

Notes

For best results, slice beef against the grain and sear before slow cooking. Add broccoli in the last 30 minutes to keep it crisp. Thicken sauce with cornstarch slurry at the end. Leftovers keep in the refrigerator for up to 4 days; reheat in a skillet with a splash of broth.
