Easy Flavor-Packed Turkey Taco Stuffed Sweet Potatoes

A quick and healthy dinner featuring lean ground turkey seasoned with smoky taco spices, stuffed inside perfectly baked sweet potatoes for a comforting and flavorful meal.

  • 2 medium sweet potatoes, washed and pricked with a fork
  • 1 lb lean ground turkey (93% lean recommended)
  • 1 tablespoon extra virgin olive oil
  • 1 small onion, finely chopped
  • 2 cloves garlic, minced
  • 2 teaspoons taco seasoning (chili powder, cumin, smoked paprika, oregano, garlic powder, onion powder, salt, pepper)
  • 1 tablespoon tomato paste
  • 2 tablespoons water
  • 1/2 cup black beans, drained and rinsed (optional)
  • 1/4 cup fresh cilantro, chopped
  • 1/2 cup shredded cheddar or Monterey Jack cheese (optional)
  • Lime wedges, for serving
  • Sour cream or Greek yogurt, for serving

Instructions

  1. Preheat oven to 400°F (204°C). Wash sweet potatoes and prick all over with a fork. Place on a baking sheet lined with parchment paper or foil. Roast for 45-50 minutes until soft when pierced with a fork.
  2. While potatoes bake, heat olive oil in a large skillet over medium heat. Add chopped onion and sauté for 3-4 minutes until translucent.
  3. Add minced garlic and cook for 30 seconds until fragrant, being careful not to burn.
  4. Increase heat to medium-high. Add ground turkey, breaking it up with a spoon. Cook for 6-8 minutes until no pink remains and meat is browned.
  5. Sprinkle taco seasoning evenly over turkey and stir well to coat.
  6. Mix in tomato paste and 2 tablespoons water. Cook for 2-3 minutes to meld flavors.
  7. If using black beans, fold them in and cook for 1-2 minutes to warm through.
  8. Remove sweet potatoes from oven and let cool slightly. Cut each potato lengthwise down the center and gently fluff the inside with a fork to create space for filling.
  9. Spoon generous portions of turkey taco mixture into each sweet potato, pressing lightly.
  10. If using cheese, sprinkle shredded cheese over the top and return to oven for 5 minutes or until cheese melts.
  11. Remove from oven, garnish with chopped cilantro, and serve with lime wedges and a dollop of sour cream or Greek yogurt.

Notes

For quicker preparation, microwave sweet potatoes for 8-10 minutes instead of baking, though baking yields better texture. Use lean ground turkey for moist filling. Adjust taco seasoning salt to taste. For dairy-free, substitute cheese with vegan shreds and sour cream with coconut yogurt. Ground chicken can be used instead of turkey. Add diced jalapeños for heat or reduce chili powder for milder flavor.
