Ingredients

Scale
  • 2 cups cooked chicken, shredded
  • 4 oz cream cheese, softened
  • 1/2 cup buffalo wing sauce
  • 1/2 cup shredded cheddar cheese
  • 1/4 cup crumbled blue cheese (optional)
  • 1/4 cup ranch dressing
  • 2 green onions, finely chopped
  • 1/4 teaspoon garlic powder
  • Salt and pepper to taste
  • 1 package (16 oz) refrigerated biscuit dough
  • 2 tablespoons melted butter
  • 1 tablespoon everything bagel seasoning (optional)

Instructions

  1. Preheat your oven to 375°F (190°C). Line a baking sheet with parchment paper or a silicone baking mat.
  2. Make the filling: In a medium mixing bowl, combine the shredded chicken, softened cream cheese, buffalo wing sauce, shredded cheddar cheese, crumbled blue cheese (if using), ranch dressing, chopped green onions, and garlic powder. Mix until well combined. Season with salt and pepper to taste.
  3. Prepare the biscuit dough: Open the can of refrigerated biscuit dough and separate the biscuits. On a lightly floured surface, roll each biscuit into a circle about 4 inches in diameter.
  4. Shape the footballs: Place about 2 tablespoons of the buffalo chicken filling in the center of each dough circle. Fold the dough over the filling to create a half-moon shape, then pinch the edges to seal. Gently shape into an oval football shape, tapering the ends slightly. Place seam-side down on the prepared baking sheet, leaving about 2 inches of space between them.
  5. Add finishing touches: Using a sharp knife, make 2-3 small diagonal slits on the top of each football to create the laces pattern. Brush each football with melted butter, then sprinkle with everything bagel seasoning if using.
  6. Bake: Place the baking sheet in the preheated oven and bake for 12-15 minutes, or until the footballs are golden brown and the filling is hot and bubbly.
  7. Cool slightly and serve: Let the footballs cool on the baking sheet for 5 minutes before transferring to a serving platter. Serve warm with extra ranch dressing or blue cheese dressing for dipping.

Notes

Don’t overfill the dough to prevent bursting. Seal edges well with a fork for extra security. Make slits before baking to allow steam to escape. Let cream cheese sit at room temperature for at least 30 minutes for smoother mixing. Assemble up to 24 hours in advance and refrigerate; add 2-3 minutes to baking time if baking from cold. Freeze unbaked footballs for up to 3 months; bake from frozen adding 5-7 minutes.
