  • 1 tablespoon (15 ml) fresh lemon juice
  • Optional: 1 teaspoon (5 ml) sugar or honey

Instructions

  1. Wash and dry the peaches by rinsing under cool water and patting dry with a clean towel.
  2. Peel the peaches if desired using a vegetable peeler or by blanching briefly in boiling water for 30 seconds, then plunging into ice water (optional).
  3. Cut each peach in half, remove the pit, and slice each half into about 1/4-inch (0.6 cm) thick slices, aiming for uniform slices.
  4. Place peach slices in a mixing bowl, drizzle with lemon juice, and gently toss to coat all slices to prevent browning.
  5. If desired, sprinkle 1 teaspoon of sugar or drizzle honey over the slices and toss again.
  6. Line a baking sheet with parchment paper and spread the peach slices out in a single layer without overlapping.
  7. Flash freeze the peach slices by placing the tray in the freezer for 2 to 3 hours until solid.
  8. Transfer the frozen slices to freezer-safe resealable bags or airtight containers, pressing out excess air before sealing.
  9. Label the bags with the date and store in the freezer for up to 6 months.
  10. Use frozen peach slices directly from the freezer in smoothies without thawing.
