Instructions

  1. In a medium mixing bowl, combine diced Roma tomatoes, minced garlic, sliced fresh basil, and finely chopped red onion.
  2. Season with salt, black pepper, red wine vinegar, and extra virgin olive oil. Toss gently to combine and let sit for 10–15 minutes to marry the flavors.
  3. Preheat oven to 400°F or heat a grill pan over medium heat.
  4. Slice the baguette or sourdough into ½-inch thick pieces.
  5. Arrange slices on a baking sheet or grill pan, brush lightly with olive oil.
  6. Toast bread for about 5 minutes per side until golden and crisp, then remove from heat.
  7. While bread is warm, rub each slice lightly with the cut side of a garlic clove.
  8. Arrange toasted bread on a large serving platter.
  9. Place bowls with tomato mixture, fresh mozzarella, olives, roasted peppers, and fresh herbs nearby for guests to assemble their own bruschetta.
