Instructions

  1. Prep your ingredients: Dice the onion, mince the garlic, chop fresh toppings (lettuce, tomatoes, cilantro, and onion). Warm tortillas by wrapping in a clean towel or heating briefly in a dry pan (about 10 minutes).
  2. Heat a large non-stick skillet or cast-iron pan over medium-high heat. Add ground beef and break it up with a wooden spoon. Cook for 5-7 minutes until browned and no longer pink. Drain excess fat if desired.
  3. Add chopped onion and garlic to the beef. Stir and cook for another 3-4 minutes until onion softens and becomes fragrant.
  4. Sprinkle in taco seasoning and stir well to coat the meat evenly. Add tomato paste and 1/2 cup water or beef broth. Mix thoroughly and reduce heat to medium-low.
  5. Simmer gently for 5-8 minutes, stirring occasionally, until liquid reduces and flavors meld. The beef should be saucy but not watery. Add a splash more water if too dry.
  6. Taste and adjust seasoning with salt and pepper as needed.
  7. Assemble tacos by spooning beef mixture onto warm tortillas. Top with shredded lettuce, diced tomatoes, cheese, sour cream or Greek yogurt, fresh salsa, and chopped cilantro. Squeeze lime juice over each taco.
