These easy hidden veggie turkey pinwheel wraps are a quick, nutritious, and kid-friendly lunchbox solution that sneaks in veggies with a creamy, tasty filling.

Ingredients

  • Large flour tortillas (8-inch)
  • Thinly sliced deli turkey (about 8 oz / 225 g)
  • Cream cheese (4 oz / 115 g), softened
  • Grated carrot (1/2 cup / 60 g)
  • Grated zucchini (1/2 cup / 60 g), squeezed dry
  • Finely chopped fresh spinach (1/2 cup / 15 g)
  • Shredded cheddar cheese (1/2 cup / 50 g), optional
  • Garlic powder (1/4 tsp)
  • Black pepper (to taste)
  • Honey or maple syrup (1 tsp), optional

Instructions

  1. Grate and prep the veggies (5 minutes): Using a box grater, shred 1/2 cup each of carrot and zucchini. Press the zucchini in a clean kitchen towel or paper towels to squeeze out excess moisture. Chop the fresh spinach finely.
  2. Mix the cream cheese filling (3 minutes): In a medium bowl, combine softened cream cheese, grated carrot, zucchini, chopped spinach, garlic powder, black pepper, and honey or maple syrup. Stir until evenly mixed.
  3. Spread the mixture (2 minutes): Lay your tortilla flat on a clean surface. Using a spatula or butter knife, spread about 1/4 cup (60 g) of the cream cheese mixture evenly over the entire surface, leaving a small margin at the edges.
  4. Layer the turkey and cheese (2 minutes): Arrange turkey slices evenly on top of the spread, covering the tortilla. Sprinkle shredded cheddar cheese if using.
  5. Roll tightly and chill (5 minutes): Starting from one edge, roll the tortilla tightly into a log shape. Wrap it in plastic wrap and refrigerate for at least 5 minutes.
  6. Slice into pinwheels (3 minutes): Remove the wrap from the fridge. Using a sharp knife, cut into 1-inch (2.5 cm) thick slices. Arrange pinwheels in lunchboxes or on a plate.

Notes
